Quick and Easy Dinner

This is a super easy recipe that is low in inflammation, and has a great mix of good carbs and protein…. Meaning its great for your body and great at filling you up.


  • Chicken Thigh (3 pieces serves 3 people)
  • 3 Bug handfuls of kale (chopped)
  • 1 whole capsicum
  • 1 medium to large sweet potato (or pumpkin)
  • 1 whole red onion
  • 3 tablespoons of teriyaki sauce
  • Handful of cherry tomatoes


  • Dice sweet potato into small chunks and start to fry up on in a medium to large pot- Low heat with a lid on top (Check momentarily)
  • In a separate pan- Saute diced onion
  • Add diced chicken to onion and cook through
  • Once sweet potato is cooked, add the chicken and onion to pot
  • Add diced capsicum and kale to pot
  • Top with sauce and stir through
  • Once Kale is softened dish up and top with halved cherry tomatoes
  • Enjoy!
